🍍 Pineapple Cake for the Bread Machine
(1.5 lb loaf, Cake setting)
Wet Ingredients:
• 2 large eggs
• 1/3 cup vegetable oil (or melted butter)
• 1/2 cup white sugar (can reduce to 1/3 if using sweetened pineapple)
• 1 tsp vanilla extract
• 1 cup crushed pineapple, well-drained (save the juice just in case batter needs thinning)
Dry Ingredients:
• 1 1/2 cups all-purpose flour
• 1 tsp baking soda
• 1/2 tsp baking powder
• 1/2 tsp salt
• 1/2 tsp cinnamon (optional, but great with pineapple)
Optional Mix-Ins:
• 1/3 cup shredded coconut
• 1/3 cup chopped walnuts or pecans
• 2 tbsp pineapple juice (only if batter is too thick—add at your discretion)
🥄 Instructions:
1. Grease the bread pan or use parchment if your machine tends to stick.
2. Add wet ingredients to the pan in the order your machine prefers (usually liquids first).
3. Add dry ingredients next, without mixing.
4. Select Cake setting.
5. Add coconut or nuts when the mix-in beep sounds (or use auto dispenser if available).
6. When done, test with a skewer. Let cool in the pan for 10–15 min before removing.
🔄 Variations:
• Add 1 mashed banana to replace part of the pineapple for a pineapple-banana loaf.
• Swap vanilla for coconut extract for an island vibe.
• Drizzle with a pineapple glaze (powdered sugar + pineapple juice) after cooling.
